I really love really simple muffin recipes and you will too. This Tropical Muffin recipe really delivers on flavour
and ease of preparation. Let's start therecipe with our dry ingredients.
I have a medium sized bowl. 1 1/2 cups of all purpose unbleached flour.
1 teaspoon of baking powder, 1/2 a teaspoon of baking soda, 1/2 a teaspoon of salt,
and 1/2 a teaspoon of groundcinnamon. Stir those ingredients together.
We'll place them to the side. Now we'lltake a medium-sized bowl into which
we're adding a 1/4 cup of softened butter, add 1 extra-large egg at room temperature please.
1/4 cup of sugar then the thing that makes these
muffins so fabulous, 1 cup of sour cream.We're going to take our hand mixer low
setting and we're just going to blend those ingredients together.
Once everything is nice and creamy, we're going to take our dry ingredients. Add a little bit.
Sprinkle on top. Keep blending. Add a little bit more of the dry ingredients. Keep mixing a
little bit more until all of the dryingredients are mixed and your batter
should be quite thick at this pointNow comes our final flavour enhancers.
1/2 a cup of finely chopped pineapple,1/4 cup of finely chopped mango,
1/4 cup of unsweetened coconut. Sprinkle that on top and then, last ingredient 1/4 cup of chopped pecans.
We're going to take aspatula and pull everything together and
you can see each and every muffin isgoing to have a burst of tropical flavours.
Now over to our muffin tin. No need togrease it. I like to take 2 spoons, take a
bit of the batter and drop a dollop intothe first well and you continue going along.
Notice to not fill to the topbecause I'm going to add a surprise into
every muffin. I'm taking a banana. We'regoing to peel it.
I'm going to add one slice of banana on top of the batter in each well. We go back to
our batter. 2 spoons and we're going to top off each well with the remaining batter.
Never one to miss an opportunity to beable to garnish, even muffins. A sprinkle of coconut.
A sprinkle of pecans. They'regoing into a preheated 375 degree oven.
We're going to bake for 10 minutes.10-minute mark, rotate your pan.
You're gong to bake for an additional 10 minutes when they come out
of the oven let them rest for about 5minutes. They pop out of the tin pretty
easily and you'll see they're quitebeautiful and charming.
Ah something pretty fantastic happens when you crack open your tropical muffin.
You're greeted by a piece of banana and all the other wonderful fruit. mmm
One bite, suddenly I feel like I'm on vacation! Hmm Tropical Muffins!

TROPICAL MUFFINS bursting with pineapple, mango, coconut, pecans and a slice of banana – these are awesome! These TROPICAL MUFFINS came in handy recently when I had family in my midst for a few days and the need for a quick and delicious snack. These were a perfect choice – this muffin recipe is a keeper. Having now tested the recipe a few times, I’ve come to appreciate how simple they are to make and the unique flavours the tropical fruit gives to the muffins too. Here’s what makes this one of the best homemade muffin recipes ever. THE INGREDIENTS - You can tell just by the photo of our ingredients that there’s nothing too complicated with this muffin recipe. I bet you already have most of the ingredients on hand. The one tip I did want to mention is about the sour cream. The inclusion of this silky smooth dairy product gives this muffin recipe a rich crumb. That said, we used a low-fat version and couldn’t tell the difference - feel free to make the recipe with either. THE FRUIT – Using fresh fruit is the only way to go, and I love the way the fresh pineapple and mango brighten the inside of the muffin with their vibrant-coloured flesh and punchy flavours. The idea to place a slice of banana into the centre of each muffin came to me during the first test run of the recipe. I’m glad it did, as the banana adds both a hit of sweetness and even more moisture. THE TOPPING – These were already on their way to being the best tropical muffins ever when I added a sprinkle of pecans and coconut onto each before baking; it took things to an entirely new level. Instead of just tropical fruit, it’s like we made the best pineapple-mango-coconut muffins with nuts ever! I’m good with (and proud of) that! As tasty as these are, this isn’t our first ‘best muffin recipe’ rodeo - not by a long shot.
