What I did here is pureed half of the canned pineapple and added it straight to the simmering coconut cream sauce. The other chunky half was added halfway. I was tempted to add curry powder but it wouldn't be pininyahang manok anymore but a fusion of curry and pininyahan. So I sticked to the recipe and didn't do any fancy stuff. Oh well, I always like to experiment but I see to it that Filipino dishes that I post are as authentic as possible where I only personalize them with my own tried and tested method of cooking. If I discover a new dish, then I put a new name to it. My father-in-law always cooks Pininyahang Manok but he prefers to use milk instead of coconut cream/milk which is equally good and I'll definitely cook that version in the future videos.
