Pineapple Cake
Break 4 eggs into a bowl
start mixing
add sugar (200g)
1 pineapple yogurt cup (125g)
add 120g of sunlower oil
add coconut flour (60g)
add flour a little at time (350g)
add 16g of baking powder
take a jar of pineapple in syrup (10 slices)
chop 3 slices and put them into the dough
the other 7 slices will be used to decorate
mix well
cover a baking pan and pour the dough (this is 24cm)
finally add candied cherries
Baking: static oven: 180° about 55min; ventilated oven: 170° about 55min
at the end of baking time, test it using the toothpick, lower temperature and bake about 5/10 minutes more if necessary

L’impasto è facilissimo, mentre la cottura richiede circa un’ora, necessaria per una torta alta e soffice, alla fine facciamo la prova dello stecchino per verificare che la cottura sia perfetta.
